Zé Paiva trocou a engenharia pela fotografia após uma longa viagem pela Europa e norte da África, em 1983. Em 1993 estudou no International Center of Photography, em Nova Iorque. Em 2012 concluiu sua Pós Graduação em Fotografia pela UNIVALI. Ensinou fotografia na UDESC, na FURB e na ESPM.

Realizou exposições em várias cidades do Brasil e recebeu diversos prêmios, entre eles o Raulino Reitz, da Fundação do Meio Ambiente de Santa Catarina, em 2002, menções honrosas no International Photo Awards, em Nova Iorque, em 2005, 2006 e 2012, e no Prix de la Photographie, em Paris, em 2007. Em 2009 foi selecionado para a coleção Pirelli MASP de fotografia. Em 2010 foi finalista do Prêmio Conrado Wessel na categoria ensaio fotográfico. Em 2012 recebeu o Prêmio Marc Ferrez da FUNARTE.

Em 2004, lançou o livro Santa Catarina – Cores e Sentimentos, pela Editora Escrituras. Concebeu o projeto Expedição Natureza Santa Catarina, que resultou no livro lançado em 2005 pela editora Letras Contemporâneas. Em 2008 lançou o segundo livro da série, Expedição Natureza Gaúcha, em parceria com a Editora Metalivros. Em 2012 lançou o terceiro livro da série Expedição: Natureza Tocantins. Desde 2016 vive na aldeia budista Mendjila em Santa Catarina.

In 2004, he published the book Santa Catarina - Cores e Sentimentos, by Editora Escrituras.
